It features in-season produce like citrus, apples, pears, and pomegranate, with a sprinkle of walnuts and herbs. It’s finished with a bright honey syrup dressing, making it a perfect side dish or appetizer.

For The Dressing:
ā¢2 to 3 tablespoons honey, warmed
ā¢Juice of 2 large limes
ā¢Ā¼ cup orange juice
For The Salad:
ā¢2 large apples, cored and thinly sliced (Honeycrisp or gala apples will work)
ā¢2 Bosc pears, cored and thinly sliced
ā¢3 Clementine oranges, peeled and segmented
ā¢3 kiwis, peeled and thinly sliced into rounds
ā¢1 cup pomegranate arils
ā¢Ā½ cup chopped walnuts
ā¢6 to 10 fresh mint leaves, chopped (optional)

Make the dressing: In a large mixing bowl, combine the dressing ingredients of honey, lime juice, and orange juice, and whisk.
Add the fruit: Add all the fruit and chopped walnuts. Sprinkle with mint, if using. Toss everything until well combined. Serve!

To add more flavor and a little Mediterranean flare, sprinkle a couple tablespoons of unsweetened shredded coconut.
You can also try adding 1 tablespoon of pomegranate molasses to the dressing. Pomegranate molasses is great in salad dressings; it adds a bright tangy-sweet note that is unlike anything else.
