YIELD: 4 SERVINGS 

maple pumpkin salad

I haven’t made a new salad recipe in a couple of weeks so I’m excited to share this one 🤤
I absolutely love finding new salad combos and this one is definitely a winner!

INGREDIENTS

1 large handful baby spinach, chopped
1 red onion, diced
1 avocado, diced
1/3 cup sun dried tomatoes, drained
200g cherry bocconcini

Maple pumpkin:
500g pumpkin
Drizzle of olive oil
Drizzle of maple syrup
Pinch of flaky sea salt
— Bake at 200°c for 30 minutes or until golden – You can also prepare this ahead of time so it’s quicker to make!

Dressing:
Juice of 1 lemon
2 tbsp olive oil
1 tsp minced garlic
Salt/pepper

Instructions

Combine everything in a salad bowl.
Mix, serve and enjoy!
