I love the combination of miso and butter… Umami, creamy, and ever so slightly sweet ðŸ˜
This one can be made quite quickly!
– 1/4 onion
– 1 tbsp minced garlic (sliced garlic is fine too)
– Spaghetti (I used brown rice spaghetti)
– A knob of butter
– Mushrooms (I used oyster mushrooms)
– Broccolini
– Salmon
– For the miso sauce: 1/2 tbsp white miso paste, 1/2 tbsp soy sauce, 1 tbsp mirin
1. Airfry the salmon first
2. In the meantime, sautee the broccolini and set aside. You can also prepare the miso sauce here.
3. Boil the pasta in a pot of salted water (remember to keep aside half a cup of the pasta water for later!)
4. While the pasta is boiling, in a pan, caramelise the onions
5. Add in the mushrooms and minced garlic, and cook for 5-8 mins
6. Add half a cup of the pasta water as well as the miso sauce, and cook on low heat until the sauce is reduced
7. Add in the pasta, butter, and broccolini. Toss to coat.
8. Serve with the salmon
