YIELD: 2 SERVINGS
Lots of lovely spiced tomato sauce, hearty beans and some seriously golden eggs with crumbled feta on top. Always a winner. 🍳🥫
1 small onion, diced
1 large red pepper, finely sliced
2 garlic cloves, finely chopped
2 tsp paprika
2 tsp cumin
1 tsp chili powder
1 tin of chopped tomatoes
1 tin cannellini beans, drained and rinsed
4 eggs
Crumbled feta
1 small handful of chopped herbs, I used coriander, parsley and parsley
1. Heat a glug of olive oil in a large sauté pan, add the pepper and onion and cook for 5 mins, then add the garlic and spices and cook for 1 more min.
2. Pour in the tomatoes and beans and season with salt and pepper, bring to a simmer to 5 mins. (you can adjust the spices here if you want to add more)
3. Make small wells in the sauce and crack in the eggs. Cover the pan and cook for about 5 minutes, until eggs are done
4. Garnish with your herbs, feta and a drizzle of olive oil. Then scoop up with crust bread or just devour on it’s own.
